What makes us special?
Our broth is slowly simmered over 12 hours with chicken bones. No substitutions and no shortcuts. We use fresh, thick noodles and only the highest quality ingredients sourced locally whenever possible including garlic from Christopher Ranch and organic ginger. Our nước chấm and seasoning are made with Red Boat fish sauce, consisting of just two ingredients (anchovies and sea salt) and barrel-aged for 12 months in Vietnam. It’s a difference we can taste and we hope you will too.
Why rice paper instead of egg noodle paper for our egg rolls?
In our hometown, we use rice paper for our egg rolls. It is something that stay forever in our taste buds. The first time we ate it again was when my sister and I visited Vietnam in 2005. We had the egg rolls of our childhood at our great aunt Four’s funeral. The first bite into that egg roll brought us back to where it began.
Why Phở Gà Go?
Phở Gà Go comes from my joy of cooking. It has always been my peace and comfort, especially after a challenging day. As a mother of two young boys, I understand how busy many of us are with kid’s activities on top of our daily work. That’s why I usually go into the kitchen and start cooking after my kids are in bed. It’s a special time, a time that I can focus on just myself. Watching a raw broth turn into something really beautiful is my kind of meditation. Knowing that the next day my family will enjoy what I created is truly the best feeling. I struggle on days that I don’t have time to cook for my family and eating out just isn’t the same. With that in mind, I wanted to create a similar peace of mind for all of you, including other working moms and dads.

My promise to you is that I will only serve what our family would eat. Every bowl is made with the same care and love that I apply when cooking for my own loved ones.
